Super easy to make, this buttery, moist and soft apple cake has layers of thinly sliced apples and a sweet and flavorful streusel topping! Just perfect with a cup of coffee!

Ingredients:

  • 1/2 cup (113 grams) butter, room temperature
  • 1/2 cup (100 grams) sugar
  • 2 eggs, room temperature
  • 1 1/4 cups (150 grams) self rising flour
  • 1 teaspoon cinnamon
  • 2 tablespoons milk
  • 3 Granny Smith apples, peeled, cored and thinly sliced
  • 3/4 cup (90 grams) self rising flour
  • 6 tablespoons (84 grams) butter, cold
  • 1/2 cup (100 grams) sugar
  • 1 teaspoon cinnamon

Instructions:

  1. Heat the oven to 350F.
  2. Grease a 9 inch round springform cake pan and set aside.
  3. Make the streusel topping
  4. In a mixing bowl, with a hand whisk or a fork, combine the flour, sugar and cinnamon. Rub in the cold butter until the mixture resembles coarse crumbs.
  5. Refrigerate while making the cake batter
  6. In a mixing bowl add the soften butter and sugar. With the paddle attachment on, beat on low speed until light and fluffy, about 3-5 minutes.
  7. Beat in the eggs, one at a time, and scrape the sides of the mixing bowl with a spatula.
  8. Stir in the milk followed by the flour and cinnamon.
  9. The cake batter will be thick.
  10. Spoon the batter into the prepared cake pan and smooth the top.
  11. Arrange the apple slices in an even layer over the cake batter.
  12. Sprinkle the streusel topping over the sliced apples.
  13. Bake the cake in the preheated oven for about 55 minutes to 1 hour and 5 minutes or until browned and firm to touch.
  14. Remove the cake from the oven and cool completely on a wire rack.
  15. Once cooled, remove the cake from the pan and with a sharp knife cut into slices.
  16. Serve with a scoop of ice-cream or just a dust of powder sugar
