I Love making soups in the winter. This chicken soup I’m obsessed with right now. I made a video for the first time ever? but a bit nervous to post it. So here’s the recipe. A Costco rotisserie chicken, 2 large carrots chopped, 3 celery stalks chopped, 1 large onion chopped. 2 garlic cloves diced. 1 Bay leaf. Salt and pepper. Parmigiana rind if you have one. Fresh herbs such as thyme, rosemary, tie them in some twine and just drop in the pot. Debone the chicken then put the carcass with all the other bones and skin in a stock pot and cover with water. Simmer for at least an hour. Then drain in a colander, you will be left with yummy broth. In the same pot add about 2T of olive oil or real butter then sauté all the veggies. Add about 2tsp of kosher salt and ground pepper. Let that simmer just until the onions start to soften. Add the broth and bring to a low boil add the bay leaf. Let simmer for 5min. Add shredded chicken (only shred half the chicken) tip: always save the rind of you parmigiana cheese. It adds yummy flavor to your soup. Also some times if I have extra veggies I’ll add them as well. Season again with Salt & pepper. #wintersoup
