Ingredients:

  • flour – 400 g – 4 cups
  • water – 100 ml – 3.5 fl oz
  • olive oil
  • baking powder – 1 tbsp
  • salt – 1 tsp
  • tomato sauce – 200 ml
  • hard cheese – 200 g – 7 oz
  • oregano

Instructions:

  1. In a bowl mix the flour with the water, the baking powder, 3 tbsp of olive oil and the salt. Mix well. Working with your hands make a smooth ball.
  2. Cut the pastry into 12 balls and with your rolling pin flatten them and make 12 circles (about 10 cm/4 inch diameter).
  3. In a bowl mix the tomato sauce with 2 tsp of oregano, 2 tbsp of olive oil and a pinch of salt. Put 1 tbsp of tomato sauce on each circle and some cheese cubes, then seal like a parcel.
  4. Place them on muffin cases (I recommend oiling the cases a little) and put a tsp of tomato sauce, dried oregano and a drizzle of olive oil on top.
  5. Line your muffins up on a baking tray and cook at 180C / 350F for 20 minutes or until golden.
  6. Beautiful, soft and delicious pizza muffins!
