2 T. Olive oil
1 cup onion diced
1 T. garlic minced
1 tsp. kosher salt
1/2 tsp. Fresh pepper 1/2 tsp. cayenne pepper
1 jalapeño seeded and diced 1/2 C. carrots diced
1/2 C. celery diced
2 C. sweet potatoes peeled and diced
4 C. chicken broth
2 C. cooked chicken shredded
1 can fire roasted diced tomatoes (in juice)
1/2 C. chunky peanut butter.
Garnish with dry roasted peanuts and fresh cilantro
Heat 2 T. of olive oil in a large pot, season your chicken with salt & pepper add it to the pan. Sauté until done remove chicken. Add two more tablespoons of olive oil,
Sauté onion, celery, carrots, garlic, jalapeño and seasonings over medium heat, cook until slightly softened, about five minutes.
Add sweet potatoes sauté for an additional five minutes.
Add the peanut butter and diced tomatoes, stir until the peanut butter has incorporated. Add broth bring to a boil, reduce heat add chicken simmer for 10 minutes, or until potatoes are tender.
NOTE-always remember to season with salt and pepper as you go. Garnish with chopped peanuts and cilantro.
