Need an easy vegetarian meal that can be made in less than 45-minutes, and tastes delicious? I’ve got you covered with my easy Vegetarian Chorizo Sausage Stuffed Acorn Squash made with brown rice, red onion, pumpkin puree, thyme, and kale. This is one vegetarian meal you’ll want to make again and again!

Ingredients:

  • MorningStar Farms® Chorizo Crumbles™
  • 2-Acorn Squash
  • 2-tablespoons Extra Virgin Olive Oil, divided. One tablespoon for sauteing the onion and the other tablespoon is to prep the acorn squash.
  • 2-tablespoons Extra Virgin Olive Oil, divided. One tablespoon for sauteing the onion and the other tablespoon is to prep the acorn squash.
  • 1-red onion, diced
  • 4-cups cooked brown rice
  • 2-cups kale, chopped
  • 1-bunch thyme
  • 4-tablespoons pumpkin puree

Instructions:

  1. Preheat oven to 400-degrees Fahrenheit.
  2. Using a sharp knife, cut the bottom ends off of the acorn squash then sliced the acorn squash in halves.
  3. Rub some olive oil on the acorn squash.
  4. Place the acorn squash face-side down on a lined baking sheet.
  5. Roast the squash for 20-minutes or until tender.
  6. While the squash is roasting, prep the sausage mixture.
  7. Saute the red onion and the MorningStar Farms® Chorizo Crumbles™  for 10-minutes. 
  8. Next, add the cooked brown rice, kale, and fresh thyme. Saute for 4-more minutes. 
  9. Scoop the Chorizo Sausage mixture into the prepared acorn squash halves. 
  10. Top with fresh pumpkin puree, more thyme, and serve.
